Happy Easter! Happy Spring! Happy, happy Everything!
It is hard to tell who is more excited for our Easter fun: Lily and Layla or Lolli and Pop. As Kelsey says, with the last name of EASTERling, extreme celebrations is more of an expectation than an option. Of course, in true Confetti Affairs style, we may have been a little eggs-tra in planning our festivities. Regardless: somebunnies are ready to hop into some Easter merriment! We hope you'll join us!
Welcome to the Peep Show!
We sprung into Spring with some Peeps and happiness blooming at our Happy Peepster party. Peeps, pastels, and pastries were the perfect way to kick off the season.
For all of the family fun we have planned, we'll need plenty of treats to enjoy and share. Of course we'll have the classic Easter desserts, but we're also introducing some new favorites that are not only yummy, but easy to prepare!
Easter M&M Blondie Cookie Bars
Ingredients:
Cookie Layer:
½ cup unsalted butter, softened
4 egg yolks
1 egg
1 box yellow cake mix
¼ cup pastel sprinkles
Fudge Layer:
1 – 14 ounce can sweetened condensed milk
3 ½ cups white chocolate chips
1 ½ tsps. Vanilla
3 packages Peeps
1 package pastel M&M’s
Directions:
Cookie Layer: Preheat oven to 325 degrees. Spray a baking dish with nonstick cooking spray.
Using either a stand mixer or hand mixer, beat butter until soft and fluffy. Add egg yolks and egg and mix until incorporated. Add cake mix gradually until fully mixed. Fold in pastel sprinkles.
Bake for 15 to 20 minutes, turning the dish halfway through the cooking time, until the edges start to turn golden brown. Remove from oven, and let sit until cooled.
Fudge Layer: Using a double-broiler, fill bottom pan with about an inch of water. In top pan, add sweetened condensed milk, white chocolate chips, and vanilla extract. Heat on high, stirring, until the chocolate is melted and smooth. Remove from heat and pour over the cookie layer. While the top layer is still wet, top with sprinkles, M&Ms, and Peeps. Let cool completely, and cut in squares.
