Birthday Blessings & Shamrock Shenanigans

We've had a birthday!


Confetti Affairs turned 1 this week! February 22, 2020, we embarked on the most incredible journey building our dream of living a life celebrating everything. Less than 3 weeks later, the world, as we knew it, ceased to exist and we began our 77 days of Guest House Quarantine. In the most difficult of times, God has continued to shower us with blessings of faith, family, food, friendships, festivities, and our post-retirement future.





Y'all! Can you believe that we are less than 3 weeks away from St. Patrick's Day? After last weeks' Snowmageddan, followed by a gorgeously sunny weekend with 75° weather, we are ready for our world to turn green once again!

Recipes Worth Celebrating





Clover Crinkle Cookies


Ingredients:

White Cake mix

2 eggs

1/3 cup oil

1/3 cup powdered sugar

Green food coloring

Directions:

  1. Preheat oven to 350 degrees.

  2. Mix cake mix, eggs and oil in a large bowl. Add 2 to 3 drops of green food coloring to get the right color consistency.

  3. Refrigerate dough for at least 30 minutes to create fluffier cookies.

  4. Using a cookie scoop create your cookie. Roll in powdered sugar and place on a parchment lined cookie sheet. Flatten cookie slightly with your fingers.

  5. Bake for 9 to 11 minutes.

Yields 24 cookies.


Leprechaun Bars


Ingredients:

1 ½ cups chocolate graham cracker crumbs

½ cup butter, melted

1 14 oz sweetened condensed milk

1 11 oz bag of mint M&M’s

1 cup Oreo cookies roughly chopped

1 cup pecans, chopped

Directions:

  1. Heat oven to 350 degrees. Grease a 9x13 inch pan. Set aside.

  2. In a medium bowl, combine graham cracker crumbs and melted butter. Stir to combine. Press mixture into the bottom of the greased pan, packing tightly with the back of a spoon.

  3. Pour entire can of sweetened condensed milk over crust.

  4. Evenly spread pecans, crushed Oreos and whole M&M’s over sweetened condensed milk. Press down firmly on toppings with the back of spoon.

  5. Bake 25 minutes. Remove from oven and cool thoroughly before slicing.


Yields 12 bars


Junior Mint Cake Mix Cookies

Ingredients:

1 box white cake mix

½ cup unsalted butter, melted

1 large egg

½ tsp. vanilla extract

Green food coloring

1 ½ cups Junior Mints, chopped or 2 cups Andes Crème de Menthe Baking Chips

Directions:

  1. Heat oven to 350 degrees. Line baking sheets with parchment paper. Set aside.

  2. In large bowl, combine cake mix, melted butter, egg, vanilla extract and two to three drops of green food coloring. Mix well to form a dough. Add in Junior Mints or Andes Baking Chips.

  3. Using a cookie scoop, form balls and place at least 2” apart on prepared baking sheets. Press dough balls down slightly with fingers.

  4. Bake in preheated oven for 8 to 10 minutes or until cookies are just set. Do not over bake. Cookies will firm as they cool.

  5. Allow to cool on baking sheet for 2 to 3 minutes before removing to wire rack to cool completely.

Yields: 3 dozen cookies
